Product details
A 70 g hand-scooped chocolate bar from Zotter, filled with Amarena cherry mousse and coated in 50% milk chocolate. The filling is made with sour cherries (9%), sour cherry concentrate (5%), and freeze-dried sour cherries (4%), all steeped in Zotter’s own pastry kitchen. A layer of cherry couverture, marzipan, and genuine vanilla sits under a thin coat of white chocolate before the whole bar is enrobed in milk chocolate.
This is a fruit-forward bar. The cherry flavour is tart and natural rather than artificially sweet, and the marzipan and vanilla layers add depth without overwhelming the fruit.

What’s inside
The bar is built in layers from the bottom up. The main filling is an Amarena cherry mousse made from sour cherries, sour cherry concentrate, and small chunks of freeze-dried sour cherries. Amarena cherries are an Italian sour cherry variety traditionally preserved in syrup, and they have a distinctly tart, concentrated flavour compared to regular sweet cherries. Zotter steeps the cherry pieces in their own pastry kitchen before adding them to the filling.
On top of the cherry layer sits a cherry couverture (a high-cocoa-butter chocolate blended with cherry), a thin layer of marzipan made from almonds, and genuine vanilla. The whole thing is sealed in a wafer-thin layer of white chocolate and then coated in Zotter’s 50% milk chocolate. The result is a bar where fruit is the dominant flavour, with the marzipan and white chocolate providing a subtle, creamy backdrop.
About Zotter’s hand-scooped chocolate
Zotter is a bean-to-bar chocolate maker based in Riegersburg, Austria. They roast, grind, conche, and temper all their chocolate in-house. The term “hand-scooped” refers to their production method: fillings are layered by hand onto long production lanes, one on top of the other, then coated and cut into bars.
