Overview
SSP (Sung Sim Precision) is a Korean burr manufacturer that produces aftermarket replacement burrs for most of the well-known professional grinder platforms. This 80 mm set is built for the Mahlkönig Tanzania, and it shares the same fitment as the Ditting 804 and 807, so it works on either platform without modification. It is a direct replacement for the stock burr set: same outer diameter, same bolt pattern, same alignment.
The geometry here is SSP’s Lab Sweet (LS) profile, sometimes called the “cast steel” geometry because it deliberately moves away from the very tight, uniform particle distribution of modern high-uniformity burrs and toward something closer to vintage cast burrs. In the cup, that translates to a heavier body, more perceived sweetness, and a slightly wider range of particle sizes. It is a good fit for medium roasts, light-medium roasts where you want sweetness rather than ultra-clean clarity, and for baristas who find ultra-uniform grinds taste a bit hollow.
How it compares to the HU version
SSP also makes a High Uniformity (HU) burr for the Tanzania. The HU set is CNC-milled to a tighter tolerance and produces a narrower particle distribution, which gives a cleaner, more separated cup with higher acidity and clarity (better suited to light roasts and very high extraction yields). The LS set sacrifices some of that clarity in exchange for a rounder, sweeter, more textured cup. Neither is objectively “better”; it’s a flavour preference. Roasters and cupping labs that want maximum transparency tend to pick HU; cafés and home users who want espresso with more body and forgiveness tend to pick LS.
About the Red Speed coating
Red Speed is SSP’s TiAlCN (Titanium Aluminium Carbon Nitride) coating. It increases surface hardness and reduces friction at the cutting edge, which has two practical effects: the burrs stay sharp for considerably longer (roughly 6 to 8 times the life of uncoated steel burrs, per SSP) and they generate less heat during grinding, which helps preserve aromatic compounds in the bean. The coating itself doesn’t meaningfully change particle distribution; that’s set by the geometry.

Notes on installation
Replacing burrs on the Tanzania (or a Ditting 804/807) is straightforward but does require dialling the grinder back in afterwards. Plan for a small amount of seasoning before judging the cup: most users report that SSP burrs settle in over the first 5 to 10 kg of coffee, after which the flavour profile stabilises. Use of non-OEM burrs may affect Mahlkönig’s warranty on the grinder, which is worth being aware of before installation.
