Purity is the newest paper from HIFLUX, the Korean filter maker behind the lyocell High Fast range. Where High Fast is built around speed, Purity focuses on the paper itself. It is made from 100% virgin wood pulp, and HIFLUX produce it with natural spring water rather than river water, replacing the water completely between batches. HIFLUX say this gives a paper with less odour than filters made by conventional processes and very little variation from one batch to the next.

Purity or High Fast?

The two ranges suit different goals. The HIFLUX High Fast Wave filters use lyocell fibre to drain quickly and deliberately let very fine particles through for extra body, which rewards grinding finer. Purity has no lyocell and what HIFLUX call a balanced flow rate, so it behaves more like a classic wave paper and is aimed at a soft, balanced, clear cup. Purity also comes 80 to a pack rather than 60, which works out cheaper per brew.

Why wave filters suit flat-bottom drippers

A flat-bottom dripper spreads the coffee in a shallower, thinner bed than a cone, which helps the water extract it evenly. The ridges of a wave filter keep the paper’s shape once wet and let a small, controlled amount of water pass along the sides. Match the number on the filter to your dripper: 155 for 1 to 2 cup drippers such as the Kalita Wave 155 and OREA V3 and V4, and 185 for the larger 185-size drippers and doses above about 20 g of coffee. A wave filter has to sit correctly in the base, so a mismatched size will not stay flat.

If the purity of the paper matters to you, the brew water deserves the same attention, since it makes up over 98% of a cup of filter coffee. A jug such as the ZeroWater 1.7 L takes water down to near-zero dissolved solids, giving you a clean base to add minerals to or blend with tap water.
