Némo Pop won the 2025 World AeroPress Championship in Seoul in December 2025, ahead of 65 other national champions. He is a researcher at APAX LAB, and the water he brewed with was built in-house over months of testing. This release bottles that exact mineral formulation, produced in collaboration with the World AeroPress Championship as a limited edition.
What the profile is aimed at
APAX describe the target cup as sweet, structured and velvety: heavy round mouthfeel, clear flavour definition, and acidity that stays controlled rather than sharp. It is tuned for AeroPress, where short contact time and full immersion tend to reward water that adds body without muddying clarity. Buyers have also reported using it outside AeroPress, including espresso, since nothing in the formulation is specific to the brewer.
How it differs from the core APAX range
The APAX LAB Box Set (TONIK, JAMM, LYLAC) and KONFLUX are a modular system: you dose them separately and in combination to season the water toward acidity, body, or florality. This one is the opposite approach. It is a single finished recipe, so there is nothing to dial in beyond dose. If you want to experiment with water chemistry, start with the Box Set. If you want a known competition result with one bottle and one variable, start here.
How to use it
Shake the bottle thoroughly before use. Add 3 to 4 g of concentrate per litre of brew water, or dose 1 to 10 drops directly into a finished 200 mL cup if you want to taste the effect side by side. APAX recommend building on demineralised water so the mineral content is fully under your control. A TDS meter is useful for checking your starting water, though not required.
