What the vacuum-insulated chamber does

Every earlier AeroPress used plastic or glass for the brewing chamber. The Steel swaps all of it for 304 stainless steel (also sold as 18/8), the same food-grade alloy used in commercial kitchen equipment, and wraps the chamber in a double wall with the air removed between the layers. That vacuum cuts heat transfer in two places: less heat is pulled into the chamber wall when hot water first goes in, and less escapes to the room during the steep. AeroPress states this gives a higher starting brew temperature than their other brewers, which is why preheating is not needed. You can still preheat for a hotter start, but it will not change how quickly heat is lost afterwards.

Brewing with a chamber you cannot see into

Because the body is opaque, the numbers 1 to 5 on the outside are there for the familiar AeroPress look rather than for reading your fill level. Inside, a laser-etched line marks the 5 level and can be seen from above. For repeatable results, weigh your water instead, but take the brewer off the scale before pressing. Two practical notes: the steel filter cap can be hot straight after brewing, so let it sit for a moment or run it under cold water before unscrewing it, and while steel survives drops far better than glass, it can dent on a hard edge.

Filters and a grinder to go with it

The Steel takes standard-size AeroPress filters, so regular paper micro-filters, metal discs and the standard Flow Control cap all fit (XL filters do not). If you want to try a different paper, Aesir AeroPress filters are a popular choice among World AeroPress Championship competitors. Aeropress Steel vs. Aeropress Premium

The Premium is the other plastic-free AeroPress. It suits a kitchen counter where you want to watch the brew through glass. The Steel is the better pick if it will travel, or if you want the larger chamber.
