The Huila Condor project

The project brings together 96 independent women coffee producers in Pitalito, Bruselas and Timaná, in the south of Huila. They deliver their coffee to a central facility where a quality team assesses each lot, and the programme runs regular workshops on processing, fermentation, drying and cupping. Producers are paid 18 to 20% above the market price, half of each payment goes directly into the women’s own bank accounts, and an internal competition gives the best lots extra visibility with roasters.

About Nord

Nord, written Norð by the roastery itself, is a coffee roaster in Oslo with cafés at Helsfyr, Bjølsen and Forskningsparken. They roast light, in the Nordic Roast style, and buy from small farms with traceability as the priority. Their roaster Alexander Monsen has twice been Norwegian Barista Champion.

Brewing it

A clean washed Colombian suits a flat-bottom dripper. HIFLUX Purity Wave filters keep the cup soft and clear, and a grinder with fine steps such as the 1Zpresso ZP6 Special makes small adjustments easy. Try 15 g of coffee to 250 g of water with a total brew time around 3:00.
