The La Pavoni Cellini Evo PID is a prosumer espresso machine built for users who require precision and consistency in their extraction. It combines a classic E61 group head with an insulated copper boiler and a commercial-grade rotary pump. The integrated PID controller allows for exact temperature adjustments to suit different coffee roasts. Additionally, the machine offers flexible installation with a switchable water supply, operating via its internal reservoir or a direct water mains connection.

- PID Controller: Digital temperature management for precise control over the boiler water temperature, leading to more consistent extractions.
- Commercial Rotary Pump: Provides quiet operation and steady pressure delivery, featuring an external adjustment point for easy pressure calibration.
- Dual Water Source: Operates using the built-in 2.9-liter fresh water tank or can be plumbed directly into a main water line using the included braided steel hose.
- Insulated Heat Exchanger (HX) Boiler: A 1.8-liter copper boiler that allows for simultaneous espresso extraction and milk steaming. The insulation improves thermal stability and reduces energy consumption.
- E61 Group Head: Constructed from press-forged chromed brass, featuring a mechanical pre-infusion chamber to ensure even water distribution through the coffee puck.
- Dual Gauges: Two front-facing manometers allow the user to independently monitor pump brew pressure and steam boiler pressure in real-time.
- Automatic Water Level: Electronic sensors manage the water level in both the reservoir and the boiler, preventing potential damage to the heating element.
