Overview

The Flair Digital Milk Steaming Thermometer is a probe-style digital thermometer for monitoring milk temperature while steaming. The stainless steel probe sits in the pitcher next to the steam wand and reads the temperature in real time, so you can cut the steam at the right moment instead of guessing by feel or by the sound of the milk.

For most milk drinks, the target window is 60 to 65 °C. Below that, the milk tastes thin and under-developed; above about 70 °C the milk proteins start breaking down and the texture turns flat. A thermometer is the simplest way to learn where that window is on your setup, and once you’ve trained your touch, it’s also a useful sanity check on busier mornings.

Digital vs. analog

Flair sells both a digital and an analog version of this thermometer. The digital model has a faster response time (typically 2 to 4 seconds for digital probes vs. roughly 10 seconds for bimetallic analog dials), shows a numeric reading rather than a needle position, and lets you switch between Celsius and Fahrenheit. The analog version is cheaper, doesn’t need batteries, and has a target range marked on the dial that some people find easier to read at a glance. If you steam milk regularly and want the sharpest feedback, pick the digital. If you just want a simple, hands-off cue, the analog is fine.

Notes on use

The Flair Milk Pitcher has a thermometer slot built into its handle (and a separate clip when the handle is removed) sized for this probe, which keeps it positioned correctly while you steam. With other pitchers, you may need a separate clip or you can hold the probe by hand against the pitcher wall. Avoid running the probe through the dishwasher; rinse and wipe dry instead to protect the seal around the screen.
