About Pink Bourbon

Pink Bourbon is a Colombian variety that has gained a strong following in specialty coffee over the past several years. The name comes from the colour of its ripe cherries, which turn pink rather than the typical red or yellow. Genetically, Pink Bourbon appears to be a hybrid of Ethiopian landrace varieties rather than a true Bourbon mutation, but in the cup it frequently delivers a distinctive combination of sweetness, florality, and fruit complexity that sets it apart. It is a demanding plant to grow: yields are moderate, it requires careful picking since the pink colour makes ripeness harder to judge than a standard red cherry, and it benefits from precise post-harvest handling. When everything comes together, the results can be exceptional.

Processing

This lot was washed with a 48-hour fermentation stage before being dried on covered raised beds. The extended fermentation develops sweetness and complexity in the cup, while covered drying protects the parchment from direct sun and rain, giving the producer more control over the drying curve. The listing describes the result as clean and balanced, with the jammy fruit and chocolate notes coming through clearly.

Producer and origin

Olga Lucia Tocora produced this lot in Garzon, a municipality in the Huila department of southern Colombia. Huila is one of Colombia’s most celebrated coffee-growing regions, known for producing cups with sweetness, balance, and clarity. The harvest season in Central Huila runs from May to July and again from October to December.

The lot is sourced through Coocentral, the primary cooperative in Central Huila. Coocentral has 3747 members, of whom 2098 are active contributors. Members typically own farms of 2 to 3 hectares at altitudes between 1400 and 2000 masl. The cooperative operates purchase points in several local villages (Veredas) including Gigante, Garzon, Guadalupe, Suaza Tarqui, Pital, and Agrado.

Since 2005, Coocentral has invested USD 2.8 million in social programs for its members, including housing, university education, healthcare support (the cooperative covers 50% of hospital bills), funeral expenses, farm infrastructure, fertilizer bonuses, life and natural disaster insurance, education programs for young growers and growers’ children, and pension funds. Growers receive 100% of the premium paid above the current market price.
