Edwin Norena is a skilled artisan who wears many hats as an agro-industrial engineer, Q-Grader, Q-processing expert, international coffee processing consultant, head COE Colombia Competition Judge, and farmer. He has honed his craft by combining his thirst for knowledge with three generations of coffee producing experience at Finca Campo Hermoso, where he has produced unique and wildly flavorsome coffees like the Natural Carbonic Maceration Gesha through collaborations with the Santuario Project. Campo Hermoso is a family heritage passed down from Don Enrique Noreña to Edwin, who inherited a passion for coffee growing. Edwin has experimented with innovative techniques to craft superior coffee and enhance flavors at Campo Hermoso and Santuario Project Colombia, which have built a new process center in Armenia to produce some of the most unique and sought-after coffees in Colombia. The Black Honey Process at Campo Hermoso involves careful hand-picking of cherries that have been harvested at the peak of ripeness, soaking them in water to remove any impurities, and undergoing initial cherry fermentation to extract the optimal flavors. The coffee is then carefully depulped, leaving a high proportion of the flavorful mucilage, and undergoes a second fermentation of the parchment to develop its unique character. It is sun-dried on African beds, with the parchment constantly turned to ensure even drying, and is carefully monitored to ensure it reaches the perfect moisture level. The coffee is then subjected to final humidity stabilization to preserve its flavors and is stored on GP bags to allow it to mellow and develop fully before being cupped and samples selected for offers.for five days and is stored on GP bags for 10 days before being cupped and samples selected for offers.
