The Varia VS4 is a single-dose electric grinder with 53 mm stainless steel conical burrs, sitting between the VS3 and the larger VS6 in Varia’s range. It handles the full spread from espresso through to French press and cold brew, with a stepless adjustment collar that moves the burr roughly 10 microns per marked step.
Two things set it apart from earlier Varia grinders: the motor speed is user-adjustable between 150 and 300 RPM, and the whole burr chamber lifts out as one CNC-machined module with a 10 degree twist of the hopper collar, so you can clean or swap burrs without losing your grind setting.

One chamber, machined from a single block
Most single-dose grinders lose a little coffee in the seams between chamber parts. The VS4 avoids that by machining the burr chamber from one piece of aluminium alloy and anodising every internal surface, so there are no joins for grounds to sit in. The hopper collar releases with a 10 degree turn and the entire chamber, driveshaft and bearing assembly lift out together. Because the alignment lives inside that module rather than being set against the grinder body, putting it back does not require recalibration. Releasing the collar also cuts power to the motor, so the burrs cannot run while the chamber is off.
What variable RPM actually changes
Conical burrs produce more fines at low speed than flat burrs do, and speed is one of the few variables you can use to push back on that. Running the VS4 nearer 300 RPM tends to give a tighter particle distribution for pour-over and other filter methods, while slower speeds suit espresso and keep heat and static down. You set a speed once and the grinder holds it, with Varia measuring RPM stability at ±1.5 percent across the range. If you brew both espresso and filter on the same grinder, this is the feature that earns its keep.
Conical or flat, and where the VS4 fits
The VS4 is a good fit if you want one grinder for everything and value low retention and easy maintenance over outright espresso separation. If you brew espresso almost exclusively and want the flavour separation flat burrs are known for, a larger flat-burr grinder like the Option-O Lagom P80 is the other direction to look. For espresso with the VS4, the included 58 mm dosing cup pairs naturally with a Normcore WDT Distribution Tool V3, since low-retention grinders tend to drop coffee in loose clumps that benefit from stirring out before tamping.
