Original burrs for the Tanzania

This is the OEM 80 mm burr set for the Mahlkönig Tanzania, the shop grinder built around bagging retail coffee and grinding for filter, French press and Turkish. The discs are cut from 1.2436 tool steel hardened to 64–66 HRC and finished with a glass bead blast, which removes machining burrs and shortens the settling-in period where a fresh set grinds slightly differently before it beds down.

The geometry is designed for gentle grinding across a wide range, from espresso fine through to French press coarse, at throughputs up to 800 g per minute. The rotating disc carries 15 coarse crusher teeth and the stationary disc 16. That combination suits a roastery bagging line or a cupping lab as readily as a café grinding brew batches.

Magnetic mounting, no screws

The Tanzania holds both burrs magnetically in slotted carriers rather than bolting them down. Nothing needs to be torqued and no fastening hardware ships with the set, which makes swapping burrs and cleaning the chamber faster than on a screw-mounted grinder. It also means the discs are solid across the face, with no through-holes.

The set is handed for counterclockwise rotation, so the rotating and stationary discs are not interchangeable with each other.

Compatibility

This set fits the Mahlkönig Tanzania and the Ditting 805. It does not fit other 80 mm grinders. The Mahlkönig E80 and PEAK burrs and the Ditting 804 and 807 sets share the diameter but use a screw-mounted interface and a different geometry, so they are not interchangeable in either direction. When ordering 80 mm burrs, match the mounting system rather than the diameter.

When to replace your burrs

Mahlkönig rates this set at roughly 4,000 kg of coffee at a medium setting. You will usually notice the symptoms before you reach that number: you have to dial finer and finer to hit the same extraction, fines increase, and cups get muddier and less sweet. Physical damage from a stone or a stray screw is the other common reason to swap a set, and that one is normally obvious from the noise.

The Tanzania is a legacy model that Mahlkönig no longer produces, though spare parts including this burr set remain available. Fitting is a job for a technician or an experienced operator, and the grinder needs dialling in again afterwards.
