Overview

SSP (Sung Sim Precision) is a Korean burr manufacturer that produces aftermarket replacement burrs for most major professional grinder platforms. This 83 mm set fits the Mazzer Major and any other grinder using the 83 mm Mazzer bolt pattern, which has become something of a de facto standard for prosumer flat-burr grinders. That includes the popular DF83 and DF83V single-dose grinders, the Ceado E37S family, and the LynWeber HG-1.

What the MP geometry does in the cup

MP stands for Multi-Purpose. Where SSP’s HU geometry is tuned specifically for espresso (dense body, classic shot character) and the brew-focused geometries are tuned for filter clarity, MP is designed to do both reasonably well. It produces a slightly wider particle distribution than HU with fewer fines, which gives espresso shots better flavour separation and pour-overs more clarity than a stock burr would, without forcing you to swap burrs depending on what you’re brewing.

In practical terms: if you mainly drink espresso and want maximum body, HU is the better pick. If you mainly drink filter and want maximum clarity, the brew-focused burrs are better. If you switch between the two, or you want light-roast espresso with brighter acidity rather than syrupy traditional shots, MP is the most versatile option in the 83 mm range.

About the Red Speed coating

Red Speed is SSP’s TiAlCN (Titanium Aluminium Carbon Nitride) coating. It increases surface hardness and reduces friction at the cutting edge, with two practical effects: the burrs stay sharp considerably longer (around 5,000 kg of coffee, vs. roughly 1,000 kg for uncoated steel) and they generate less heat during grinding, which helps preserve aromatic compounds in the bean. The coating itself doesn’t meaningfully change particle distribution; that’s set by the geometry.

Notes on installation

Replacing 83 mm burrs is a straightforward job for anyone comfortable opening the grinder, but you will need to dial back in afterwards and zero the burrs to find the new contact point. Most users report a brief seasoning period of 5 to 10 kg before the cup profile fully settles. Use of non-OEM burrs may affect the grinder manufacturer’s warranty, which is worth being aware of before installation.
