The LAGOM GDS (Grinding Dynamics Study) is Option-O’s dual-geometry grinder: two separate grinding chambers in one chassis, each with its own burr set, its own micron-calibrated grind dial and its own speed range. A single 1650 W brushless motor drives both through a belt system geared so the conical runs at 100 to 500 RPM and the flat at 200 to 2000 RPM.

Two burr configurations are offered. The hybrid setup pairs Option-O’s new 100 mm Mizen HC100TX conical burrs (with the conical version of their Preliminary Crushing System) with 102 mm Mizen 102OM flats. The twin setup runs Mizen 102OM against SSP 102HU flats, which isolates burr geometry and RPM as the only variables between two brews of the same coffee. It is a tool for people who want to taste the difference rather than read about it, and at 29 kg it is built as lab and café equipment more than kitchen equipment.

Two geometries, one chassis

Most grinder buying decisions start with picking a side: flat burrs for separation and clarity, conical burrs for body and texture. The GDS exists because Option-O got tired of answering that question in the abstract. Both chambers sit in the same frame, fed the same coffee, so the comparison is a matter of grinding twice rather than owning two machines.

The conical side uses the new Mizen HC100TX burr, a 100 mm set with a redesigned feed profile borrowed from flat burr thinking, plus a stepped Preliminary Crushing System. The PCS pre-breaks beans and regulates how they enter the burrs, which reduces the bean-column effect where a conical drifts coarser as the hopper empties.

Drive and stability

Flat and conical burrs have different ideal operating speeds, so a single-speed motor would compromise one of them. The GDS solves this with a composite-reinforced belt drive that gears each chamber into its own RPM window from one 1650 W BLDC motor. The belt also keeps motor vibration and heat away from the burr chamber compared to a direct-drive layout. A secondary thrust bearing carries the axial load during grinding, and critical components are machined to within ±0.01 mm, with post-anodization machining to limit tolerance stack-up. The upper burr assembly comes out as one fastened module and goes back in without recalibration.

Controls

There is no screen. Grind size and speed are set on analog dials with calibrated micron markings, one revolution covering 0 to 1250 µm on the conical side and 0 to 750 µm on the flat. There are dedicated switches for purge and for the static neutralizer. The front face is a magnetic mounting platform: portafilter forks (49 to 58 mm baskets) and cup platforms swap without tools, with clearance settings at 110, 140 and 170 mm for dosing cups, blind shakers and the like.
