Cacao beans from the Bejofo Estate on Madagascar, which is a massive estate that grows some world famous cacao. The reason why we call this ‘Fast Dried’ is because after the fermentation, we dry the beans in the sun for 8 hours per day in the beginning. This is oppose to our Madagascar 64 % Slow Dried where bean drying process is much slower. This gives a very different flavour profile. Madagascar 64 % Fast Dried is an acidic more spontaneous taste. A very clean chocolate.
