What the profile is aimed at
APAX describe this as a recipe that lets the coffee’s origin come through: more clarity, more terroir and lifted floral notes. It suits the kind of light, expressive filter coffees Motors is known for, and it can be used for espresso as well.
How it compares with the Némo Pop collaboration
Both are fixed profiles in 20 mL bottles, dosed the same way. The difference is in the minerals. The Némo Pop recipe includes calcium chloride and is aimed at a sweet, heavy-bodied cup for AeroPress. The Motors recipe has no calcium: its hardness comes from magnesium chloride, citrate and sulfate, with potassium and sodium salts for buffering. For a brighter, more transparent cup from light roasts, Motors is the one to try; for body, the Némo Pop. If you would rather build your own water, the modular APAX LAB Box Set is the place to start.
How to use it
Shake the bottle well before use. Add 3 to 4 g of concentrate per litre of demineralised water, or add 1 to 10 drops straight into a 200 mL cup to taste the effect side by side. Starting from water with nothing in it keeps the recipe as intended, and a filter jug such as the ZeroWater 1.7l Water Filtration Jug brings tap water down to near zero TDS.
