Eugene Altieri is Italian-American businessman residing in Panama who bought coffee farm to grow coffee in the early 2000. Today, his children are following his legacy. Each farm has its own micro-climate which permits the production of different, unique, quality coffees. Coffea Circulor is in collaboration with Altieri since 2018 and have built several coffees together and have been featured successfully at national and international events.
The coffee cherries are manually selected and cleaned to make sure they are completely mature. The coffee cherries are pulped to remove the fruit layer and keep the mucilage layer. The fermentation occurs in a 24 hour tank full of water. Tiny micro organisms generate enzymes to help break down the mucilage. After the fermentation, the beans are washed to remove the mucilage from the bean. In the final stage, the parchment is dried in the sun on African raised beds at 1,800 masl until 11% humidity is achieved. The parchment is later mechanically removed and the beans will later be placed in a temperature controlled warehouse for resting in GrainPro bags as they are awaiting export. This lot is delivered vacuum sealed to ensure quality is preserved during and after transport.
