Finca Inmaculada
Finca Inmaculada is run by the Holguín family in Pichindé, in the hills near Cali in Valle del Cauca. The farm is known for growing rare varieties with a great deal of care, and its washed Pink Bourbon is one of the coffees it is best known for. Guido picked this lot for its Vision collection, the part of the range kept for small, exceptional batches.
What Pink Bourbon is
Pink Bourbon is named after its cherries, which ripen to a pink or orange colour rather than the usual red. It was first grown commercially in Huila in southern Colombia and is valued for a floral, fruit-led cup. Despite the name, genetic testing has shown it is not part of the Bourbon family but closer to Ethiopian landrace coffees, which fits its floral, tea-like side.
About Guido Coffee
Guido is a specialty roastery, coffee shop and barista school in Bucharest, Romania. For every origin they test and choose a roast profile, and they recommend how long each coffee should rest after roasting before it shows its full flavour. The range is sorted into three collections: Core for chocolatey, easy coffees, Explore for fruitier and more floral lots, and Vision for rare and experimental coffees that come in small batches.
Brewing it
Guido roasts this lot as an omni, but a delicate washed coffee like this shows the most on filter, where the chamomile and sour cherry come through clearly. As espresso, the blueberry sweetness takes over and the texture turns silky. Washed coffees are also where water matters most, since very hard water flattens floral notes. Filtering it through a jug like the ZeroWater 1.7l Water Filtration Jug and adding a mineral concentrate back gives you control over what ends up in the cup.
