What it does

The gauge threads into the plunger stem and reads brew pressure in real time as you lower the lever. On a manual machine there is nothing holding pressure steady for you, so the needle is the difference between pulling a shot by feel and pulling one you can repeat tomorrow. Flair’s own guidance is to aim for 6 to 9 bar over a 25 to 30 second shot, and to adjust grind size rather than lever force when the pressure sits outside that window.

Reading the dial

The face is divided into bands. Below 6 bar usually means the grind is too coarse and the shot will run thin. The 6 to 9 bar band is where espresso lives. Above 10 bar the grind is too fine, and the top of the dial is marked as a stop area: continuing to press past it can damage the gauge and will produce a choked, unpleasant shot regardless. Treat the upper band as a warning rather than a target.

When to replace one

Pressure gauges are wear items, in the same category as o-rings and silicone parts. Replace yours if the needle no longer rests at zero, if condensation has fogged the face, or if it has taken a knock. A gauge reading consistently off is worse than none at all, because it sends you chasing grind adjustments for a problem that was never in the coffee.
