Sasaba washing station

Tsegay Hagos Tesfaye founded Sasaba near the town of Bule Hora in the Kercha district of Guji. Around 500 smallholders farming the surrounding hills bring their hand-picked cherry to the station, which pays premiums when lots meet its quality standards and trains its farmers with the long-term aim of helping them export their own coffee. For natural lots like this one, the whole cherries dry in the sun on raised beds before hulling.

Nord, written Norð by the roastery itself, is a coffee roaster in Oslo with cafés at Helsfyr, Bjølsen and Forskningsparken. They roast light, in the Nordic Roast style, and buy from small farms with traceability as the priority. Their roaster Alexander Monsen has twice been Norwegian Barista Champion.

Brewing it

Fruit-led naturals like this show best as pour-over.
