Varietal: Parainema
Region: Santa Barbara, Las Flores, Honduras
Producer/Farm: Grevil Sabillon / El Plan
Process: Washed
Altitude: 1350 masl

“Grevil’s father was one of the first to found the coffee culture in Santa Barbara. This particular region
always has the highest placements in the Cup of Excellence and their neighbor Eulogio Martinez won
the competition in 2015 with this particular botanical variety. We’ve had coffee from him as well, but
this year we’ve picked out a washed Parainema from Grevil Sabillon. The Parainema is a rather
mythical variety that doesn’t taste like anything else. It often has a very high acidity, which made the
judges of the Cup of Excellence actually believed that Eulogio had cheated and brought coffee from
Kenya to the competition.

The Parainema often has a spicy note that is a bit reminiscent of root beer or Dr Pepper®. Along with
this, we mainly find nougat, green apple, gooseberry and lime zest. A very complex and exciting
coffee that we couldn’t resist buying.”

    One of my favorites so far. Bit more developed than my preference but did not expect this to be a Honduras. Black tea and tobacco on the nose and Stevia-Sweet Tea on the palate. So good.
