This coffee is grown by several small farmers in the area around the village of Cheblesa in the Yirgacheffe region of Ethiopia. This coffee consists of two local “landrace varieties” Wolisho and Dega which are unique to this region. When the coffee beans are harvested, they are handed over to Negusse Debela who runs the village washing station. After the bean is separated from the rest of the berries, the beans are fermented for 72 hours in ceramic tanks before the beans are washed clean in washing channels. Negusse uses ceramic tanks which speed up the process and give the coffee a cleaner appearance in the cup.

Was that cream of coconut I smelled? This didn’t turn out like a lot of Yrgacheffe I’ve had. Grapefruit for sure, white flowers sure, savory interesting. Also glad that finally somebody mentioned what Heirloom varieties can consist of. Anyone had a Wolisho or Dega before, any takes?

This one has my vote for Best Bean so far! The scent, both before and after the grind, was astounding – not to mention once it was breweing. A smooth sipper with just the right amount of Ethiopian floral flavors 👏 👏 👏 Wish I had a bathtub 🛁 full of the stuff 🤤
