Unlike the classic V60 which relies heavily on your pouring technique to control flow, the Neo is engineered for controlled bypass. This means it allows a specific amount of water to flow along the walls (bypassing the bed) to reduce bitterness and ensure a consistent extraction time, even if your pour isn’t perfect.
