This coffee undergoes anaerobic fermentation, a process that takes place in barrels or tanks without access to oxygen. This method produces a unique, complex flavor.

The São Silvestre farm has been run by the Andrade brothers since 1991. The family is one of the oldest coffee-growing families in the Cerrado Mineiro region of Minas Gerais, known for its high-quality beans. Today, the farm is managed by brothers Ismael and Eduardo Andrade, who uphold their ancestors’ tradition of sustainability and respect for their workers and the environment. São Silvestre is located between 1100 and 1200 meters above sea level, providing a balanced climate for the coffee plants. This, along with the Andrade brothers’ careful work, results in award-winning coffee that is recognized internationally as some of Brazil’s best.
