The beans are 2–4 months off roast, rested and ready to shine. Many roasters actually find that coffees hit a lovely sweet spot around the three-month mark. Expect delicate, sweet, and juicy cups that work wonderfully for pour-over and other filter methods that highlight bright, lively flavours.
