Today, we’re heading to the high-altitude hills of Ethiopia with a truly exceptional coffee from Coffee Collective: the Bekele Honey.
This honey-processed coffee, made exclusively for Coffee Collective, showcases the brilliant work of producer Bekele Karchara. Coffee Collective describes it as a perfect bridge: it has the sweetness and expressive nature of a classic Ethiopian profile but with a clean, transparent quality often found in washed coffees.
A little tip for today: Ethiopian heirloom coffees, like this one, can sometimes be a little easier to over-extract. That beautiful clarity can turn bitter if you grind too fine or brew too hot. Try backing off your grind just a tiny bit and pay close attention to the flow.

Bekele Karchara is one of our most exciting new producer partners in recent years. Working at extremely high altitudes, he produces coffee of remarkable quality. This honey-processed lot was developed exclusively for us.
The combination of exceptional cherry selection and slow, controlled drying at altitude results in a cup that is sweet, transparent, and exceptionally clean.
The honey process bridges what we value most in washed coffees with the character of classic Ethiopian profiles. The result is a cup that is both delicate and expressive, with remarkable clarity and depth.
Coffee: 16 grams
Water: 250g / 94 degrees / 15-30ppm
Grind size: 700-950um / Medium coarse
Rinse the filter with hot water.
Add coffee and level the bed.
Bloom for 30 seconds with 48g water.
Pour the rest of the water in one pour.
When the water’s through, remove the dripper and enjoy your cup.
