Good morning. It’s the final Friday before Christmas, and we have coffee for you from Copenhagen’s celebrated roaster, Prolog, who have chosen one of their absolute flagships: the Chelchele Washed.

This coffee, from the Yirgacheffe region of Ethiopia, is a washed heirloom lot that Prolog chose as an example of what they call “sense evoking coffee.”

Why did you choose this coffee for the Advent Calendar?

This is one of Prolog flagship coffees. One of our all time favourites.
Very expressive and versatile – great example of what we mean when we say “sense evoking coffee”

V60 Brew Recipe

Coffee: 14.5-15.5/29-31g
Water: 250g/500g / 100 degrees
Grind size: Grind setting: adjust to the brew time and TDS/EXT target.

Bloom: 0:40-0:50
Pouring time: 1:40-1:50/2:40-2:50 (1:00 after bloom)

00-00:10 first pour 60g
00:00-0:40 bloom
0:40-1:40 190g main pour. Gentle shake and tap.

Total brew time: 2:30-3:00 (remove the dripper when drawdown is finished).

Brew time: 2:20-2:40
TDS target: 1.27-1.45%
EXT target: 19-22%
