Welcome to December 10 (10 days into the advent calendar already?!). Today we’re heading to Peru with Jacu Coffee Roastery from Ålesund. This is a honey-processed yellow bourbon that brings a little sunshine and memories of summer to your cup, think ripe fruit, gentle spice, dried pineapple, and caramel.

Jacu chose this coffee with help from their friend Svein, a Q-grader who lives in Peru and sourced it especially for them.

Why did you choose this coffee for the Advent Calendar?

We’re so excited to share this special coffee from Peru! Our good friend Svein, a Q-grader who lives in Peru, sourced it for us. It’s a bit different from many of the Peruvian coffees we’ve had before — with its distinctive character and clean, layered sweetness, it really stands out. We are very happy with the result

V60 Brew Recipe

Coffee: 15 grams (1:16.6 g ratio)
Water: 249g / 94 degrees
Grind size: 800-1600 um / medium/coarse grindsize  (26 clicks on Comandante C60)

50 g bloom for 30 seconds
0:30- 50 g pour center/ circular
1:00- 50 g center/ circular
1:30- 50 g circular pour
2:00 – 50 g circular pour
TBT. 2:50-3:00
Pour water just when the water have drained.

Jacu

Our name comes from the bird Jacu in South America. It is known to run from plantation to plantation in the tropical areas looking for the best coffee beans. This story has inspired us and we work to find the world’s best coffee beans. We search for the good plantations and the optimal processing.

When the coffee beans arrive at our premises, they are roasted on the Loring S35 roaster. There we work to find the roasting profile that brings out the very best in the coffee beans. We process orders from our customers and pack and ship the same day as far as we can. Our daily focus is to deliver as good coffee as possible, both to private customers, coffee bars and cafes throughout Norway.
