Finca El Rubi, where this coffee originates, is located in the Acevedo region of Huila and was a wedding present from the owner Heiner to his wife Johanna 25 years ago. Heiner has always been dedicated to improving the farm’s processing methods and quality, initially growing Caturra and then switching to more exotic varietals including Papayo, Pink Bourbon, and SL 28 plants. This coffee is 100% pink bourbon variety, which is a rare and difficult to produce consistently, it is also known for its unique color and flavor profile. Heiner and Johanna began experimenting with processing in recent years and are working with temperature-controlled fermentations, They use an anaerobic process that begins by harvesting and selecting only ripe cherries, placing them in large hermetic tanks for a five-day-long anaerobic fermentation. The coffee is then sun-dried for 7 to 10 days, down to 11-12 % moisture, depending on the weather.

This 100% pink bourbon from Huilla is a natural anaerobic coffee with a unique flavor profile of raspberry, blueberry, amarena cherry, and cacao nibs.
