Potosi’s first experiments with extended fermentation, though not carbonic or anaerobic, resulted in a distinct cognac flavor that earned the coffee its name. The Potosi farm is among the impressive list of farms that make up Cafe Granja La Esperanza, located in the Cauca Valley of Colombia at an altitude of 1800 masl. This San Juan varietal coffee has a strong alcohol, funky, fermented, and juicy flavor with a finish reminiscent of dark chocolate bonbons.

This is my second time tried this San Juan from Cafe Granja La Esperanza. Always love to try different fermentation processes like this one. I can smell the beans when the first time I opened the bottle, it’s funky but in good way. Very vibrant and wild. Highly recommend if you are feeling adventurous.
