XO represents quality and luxury, and is considered the top tier. Potosi XO, a coffee produced by the Potosi farm, shares many characteristics with XO. Potosi’s first experiments with extended fermentation, though not carbonic or anaerobic, resulted in a distinct cognac flavor that earned the coffee its name. The Potosi farm is among the impressive list of farms that make up Cafe Granja La Esperanza, located in the Cauca Valley of Colombia at an altitude of 1800 masl. This San Juan varietal coffee has a strong alcohol, funky, fermented, and juicy flavor with a finish reminiscent of dark chocolate bonbons.
