You may have heard the term “mokka” before, perhaps associated with a frothy coffee mixed with cheap chocolate and a half-shot of dark roast espresso that made you shudder. However, there is a different kind of mokka that you should know about. It is actually a dwarf mutant of the Bourbon variety and shares many similarities with the low-caf laurina variety.
The mokka bean is small in size and its cherry is filled with sweet juices that allow it to naturally ferment. It is grown on the HAWAII farm, located at around 1500masl, by our friends at Cafe Granja La Esperanza in Colombia. Despite its small size, the farm has been experimenting and has exemplified the meaning of “small but mighty.”
Through a 48-hour fermentation process that is quality controlled with temperature checks every 10 hours, Hawaii Mokka coffee is produced with flavor notes of gunpowder oolong and heavy spices. The cup greets you with an intense funky fragrance and leaves you with a long and complex aftertaste.
